Notable for using real marshmallow root, this recipe makes one quart. I use the Donvier hand-cranked ice cream maker.
You might want to use less vanilla which can mask the flavor of the marshmallow.
Ingredients
- 3 eggs
- 1 cup water
- 1/4 cup dried marshmallow root
- 1 cup milk
- 1/2 cup to 1 cup sugar, depending on taste
- 2 cups cream
- 1 tsp dried vanilla powder or vanilla extract.
Preparation
- Steep marshmallow root in one cup of boiling water for 5 minutes. Allow to cool for 5 minutes.
- Beat together 3 eggs, 1 cup milk, and marshmallow tea.
- Add sugar.
- Heat and stir constantly on medium heat for about ten minutes as mixture thickens.
- Cool to about room temperature.
- Add cream and vanilla.
- Transfer to ice cream maker and stir until frozen.
