Hubbard squash and acorn squash are excellent and very easy to prepare. The quickest way to prepare them is by steam, but the tastiest is to roast them in the oven: Cut a squash in half and put it in a ceramic dish upside down, maybe with some olive oil. Roast it for 45 minutes on anything between 175°C and 200°C. To steam, cut into golf-ball sized chunks and steam in a basket.
Either way, when you can stick a knife and it goes through like butter, the squash is done.
