I made these staying at a place without a pan for pancakes, but a non-stick muffin tin.
Ingredients
This should be enough for two hungry people.
- 1.5 cups just-add-water pancacke mix.
- 1.25-1.5 cups water.
- 2 tablespoon oil.
- 1 cup fruit preserves.
Preparation
- Preheat an oven to 425ºF, 220ºC.
- Pour dry mix in bowl.
- Add water, stirring just enough to get most of the mix wet, but leaving small lumps. If you stir too much, the cakes won't rise much.
- Fold in half of the oil, gently.
- Grease the tin with the other half of the oil while the dough is rising for a minute.
- Pour even amounts into each well of the tin.
- Bake for 12-18 minutes, until brown on the bottom. If no dough sticks to a toothpick stuck into the center of a cake, they're done.
- Warm preserves in the microwave, and pour on top of your freedom crumpets.
