Notable for using real marshmallow root, this recipe makes one quart. I use the Donvier hand-cranked ice cream maker.

You might want to use less vanilla which can mask the flavor of the marshmallow.

Ingredients

  • 3 eggs
  • 1 cup water
  • 1/4 cup dried marshmallow root
  • 1 cup milk
  • 1/2 cup to 1 cup sugar, depending on taste
  • 2 cups cream
  • 1 tsp dried vanilla powder or vanilla extract.

Preparation

  1. Steep marshmallow root in one cup of boiling water for 5 minutes. Allow to cool for 5 minutes.
  2. Beat together 3 eggs, 1 cup milk, and marshmallow tea.
  3. Add sugar.
  4. Heat and stir constantly on medium heat for about ten minutes as mixture thickens.
  5. Chill by placing saucepan in a bowl of ice and stirring.
  6. Add cream and vanilla.
  7. Transfer to ice cream maker and stir until frozen.
