Freedom crumpets with hot berry preserves.

I made these staying at a place without a pan for pancackes, but a non-stick muffin tin.

Ingredients

This should be enough for two hungry people.

  • 1.5 cups just-add-water pancacke mix.
  • 1.25-1.5 cups water.
  • 2 tablespoon oil.
  • 1 cup fruit preserves.

Preparation

Pancake mix should be thick enough to hold a bit of a shape, and it should have bubbles and lumps.
  1. Preheat an oven to 425ºF, 220ºC.
  2. Pour dry mix in bowl.
  3. Add water, stirring just enough to get most of the mix wet, but leaving small lumps. If you stir too much, the cakes won't rise much.
  4. Fold in half of the oil, gently.
  5. Grease the tin with the other half of the oil while the dough is rising for a minute.
  6. Pour even amounts into each well of the tin.
  7. Bake for 12-18 minutes, until brown on the bottom. If no dough sticks to a toothpick stuck into the center of a cake, they're done.
  8. Warm preserves in the microwave, and pour on top of your freedom crumpets.
